Enzymes are used today in many different industries. The use of enzymes in the food and feed industry is well established and widespread 1,2.
Enzymes are capable of specifically manipulating all the major biological macromolecules, as well as the smaller molecules such as amino acids and vitamines. Due to their specificity, a reduced level of by-products, high yields and controled composition of the products is obtained.
Also, enzymes work at mild environmental conditions (temperature and pressure) that leads to more economical industrial equipment.
