1. Introduction.

The acceptance or the rejection of what man uses in food, drink, confectionery, cosmetics, medicine, and in many other applications are largely dependent on its flavour. Factors leading to this fact are many and complex. In ultimate decision they depend on the sensibility of the consumer and they are related not only to the odour and taste, but also to the other senses, namely sight and touch (textural feeling).
