In the wet curing process of freshly picked coffee cherries, after washing and mechanical depulping some pulp mucilage adherent to the shells that encase the coffee beans is removed through natural fermentation in tanks (12h - days). Because prolonged fermentation can cause changes in the aroma of the beans, in some industrial units the pulp removal process is accelerated using enzymes.
